For an island of 25 square kilometres, St Barts is remarkably well fed, and the tourism committee's official directory of bars and restaurants will keep you busy for a fortnight. And yet, ask returning guests about their best meal, and a surprising number describe an evening they never left the villa: a long table on the terrace, the sea going dark, a chef working quietly in the kitchen behind them.
Hiring a private chef in St Barts is easier to arrange than most people expect. Here is how it works, what gets cooked, and when to ask.
Breakfast, your way
Mornings set the tone, so they are worth getting right.
Every morning except Sundays, fresh baguettes and croissants from our family-run Boulangerie Choisy are delivered straight to your villa. No alarm, no drive into town, no queue. You eat when you wake, on the terrace or by the pool, and the day starts at your pace rather than a hotel's.
For a fuller, fully prepared breakfast, we can arrange a private chef to come to the villa: colourful fruit salads, eggs cooked exactly as you like them, local cheeses, fresh juices, whatever the morning calls for. This is available with advance booking and is subject to the chef's availability, so mention it when you are still planning the stay rather than the night before.


My recommendation: book the chef breakfast for the mornings that carry weight, and leave the others to the bakery. A birthday. The day the whole family finally arrives. The morning after a late dinner, when nobody wants to think about the kitchen, let alone shop for it.
Private chef experiences, from poolside to plated
A chef in the villa is not one single format. It stretches from a barefoot lunch to something closer to a restaurant service, and the format matters more than the menu when you are choosing.
The Sunset Dinner is the classic: a plated dinner served as the light goes, usually on the main terrace, at the pace of a long evening.
Pool and Cocktail is the daytime version. Small plates, drinks in hand, guests drifting between the water and the table, no fixed seating plan.
The Caribbean BBQ takes over the outdoor grill: a relaxed, sociable format that works particularly well for groups who have spent the day on a boat and want to stay outside.
Surf and Turf with local lobster is the celebration menu, built around grilled Caribbean lobster and a serious cut of beef.
Contrary to the idea that a chef at home means a fixed set menu, the opposite is true here: menus are tailored to your preferences, the season and the local catch. Rates and availability are quoted on request, because a chef for eight at a poolside lunch and a chef for fourteen at a plated New Year's dinner are not the same booking.

Two practical notes, learned from dozens of villa dinners on this island. First, send your dietary requirements in writing, well ahead of arrival, not in conversation: allergies, the vegetarian in the group, the child who will eat pasta and nothing else. A chef who knows this a week ahead builds a better menu than one who improvises at 6 pm. Second, decide whether you want the food plated and served, or set out family style for the table to share. Both are good evenings. They are not the same staffing.

Private chef bookings: when to ask, and for how many nights
Staff in St Barts are arranged on request, for the days you choose. Nothing is imposed on the weekly rate, which is why a week can be built to fit: a chef on the first night so nobody shops after the flight, a barbecue midweek, and the rest of the evenings out in Gustavia.

Over Christmas, New Year and the peak February to March weeks, earlier is safer: the island's best chefs are working every night, and the good ones are committed long before the guests land.
The villa itself has a say in this. A chef needs a real kitchen and room to work without crossing the living room, and a plated dinner for fourteen needs a table that seats fourteen. A word on the trade-off, because it is real. A chef in the villa is not the budget option, and what the money buys is something a restaurant cannot sell you: children who go to bed upstairs rather than in a car seat, a table you never have to leave, and an evening that ends when your group decides it ends rather than when the kitchen closes. For a group of ten or more, once you count taxis, drivers and the logistics of moving everyone twice, the gap narrows further than most people assume.
One last thought before you plan the week. The temptation, on an island this well fed, is to book a table every night. Resist it once or twice. The evenings people describe years later tend to be the ones where nobody had to drive home.
